I realize it's March 18, and I haven't posted in a really long time, but here's a cupcake I made around Christmas time. (Such a long time ago, I know!)
I'm sorry, I've been busy with senior stuff, colleges, and work, so I haven't been baking much or posting.
Anyway, these are chocolate cupcakes with peppermint swirl frosting. I thought they'd taste like a peppermint patty, so I decided to go with chocolate rather than white cake. The frosting wasn't that hard to make, I just made regular icing and added peppermint extract flavoring, dyed half of it red, put it in half of the piping bag, and filled to rest with the remaining white frosting. Make sure you squeeze some out of the bag to get it to look like a candy cane before you put it on the cupcakes!
I topped them off with crushed candy canes, which unfortunately they got soggy after a day, so eat them when they're fresh!
