Pumpkin Spice Cupcakes!

These cupcakes were originally supposed to be like the Starbucks Pumpkin Spice Frappuccino. I love them!

I didn't want I put too much coffee in them because I was afraid it would overpower them. You can taste it a little bit though. They are pumpkin spice cupcakes with coffee. The icing is cinnamon cream cheese, and the garnish consists of ground coffee beans and brown sugar.
These are delicious!

Red Velvet Cupcakes!

I know it's not Valentine's Day yet, but I needed to make red velvet cupcakes. This is a recipe from The Cupcake Diaries. It was okay, but I'm not a big fan of red velvet. Everyone who tried them said they were good!

It's a red velvet cupcake (recipe from Georgetown Cupcake) with classic, vanilla buttercream icing. A homemade, marshmallow fondant dot dyed red served as a topping.

Pumpkin Cupcakes!

Besides the random bursts of snow, it still feels like fall in Pittsburgh for the time being. This inspired me to bake pumpkin cupcakes which are very classy for fall. They go with Halloween and Thanksgiving, so they are versatile. Any way, it's just a pumpkin cupcake with cream cheese filling and vanilla cream cheese frosting! Oh, and not to mention a pumpkin candy corn to top it off! YUM! :) Happy Fall!


 

Spider Web Black Bottom Cupcakes!

I know Halloween has come and gone, but here are the cupcakes I made for it!
I made a black bottom cupcake which is just a chocolate cupcake with cream cheese baked inside. The icing is orange cream cheese (thank gosh for food coloring)! The "web" consists of melted white chocolate on wax paper. The "spider" is just a chocolate chip!
These are SO CUTE. I am glad I made them, they really represent Halloween. Thanks for reading; Happy Belated Halloween!

Churro Cupcake!

I have not blogged in FOREVER. Wow, it has seriously been over a month. Sorry, I've just been extremely busy. Over the past month or so, I think, I made churro cupcakes (and some more chocolate chip cookie dough cupcakes..YUM)!

The churro cupcakes are cinnamon cupcakes with caramel filling and cinnamon icing. They have a cinnamon garnish on top with drizzled caramel! They were really rich, and awesome! Here are some pictures...

Apple Streusel Cupcake!

Classic apple pie & a cupcake, what?!
It's an apple cupcake with cinnamon frosting and apple streusel topping! Yum. The cupcake is moist while the streusel adds texture!

Dirt Cupcakes!

I know it isn't Earth Day or Halloween, but I made "dirt" cupcakes. Dirt is just pudding, Oreos, whipped cream, and cream cheese mixed together.

I filled classic chocolate cupcakes with "dirt", frosted them with vanilla buttercream icing, sprinkled crushed Oreos over the icing, and topped each one with a gummy worm!
These are fun cupcakes to make for any occasion, Halloween, Earth Day, the first day of spring, or even Mother's day (if you made them look like flower pots)!

Chocolate Chip Cookie Dough Cupcakes... Again!

I just had to make these cupcakes again. They were so good the last time I baked them. I think they were the first cupcakes I ever posted on here. Anyway, these are chocolate chip cupcakes with a cookie dough centre/ filling and brown sugar frosting on top! Oh, and there are chocolate chips sprinkled on top to finish them off! They're sooooo good, and I'm not kidding!

Buckeye Cupcakes!

Chocolate and peanut butter is sooooo good, right? So that means that a buckeye cupcake has to be terrific! (A buckeye is basically peanut butter dough covered in chocolate.) I made classic buckeyes, flipped them over and placed them in the centre of chocolate cupcakes as the "filling". Then I frosted the cupcakes with peanut butter icing! Plus, I put chopped up pieces of chocolate on top of every cupcake! Yummmmm.

Carrot Cupcakes!

Yum! Carrot cupcakes. Soooooo good! They're moist cupcakes with vanilla cream cheese frosting. Plus, there's cream cheese filling in the middle! Not to mention a dot of orange fondant on top! For some reason they remind me of thanksgiving... Maybe it's the orange colour; they look pumpkiny! Thanks for checking them out!

Hummingbird Cupcakes!

I was dying to make these cupcakes. Supposedly, they are super sweet, but it's a good sweet. Not too sweet, just right. It's a hummingbird cupcake which has bananas, pineapples, cinnamon, pecans, and honey in it. The vanilla cream cheese frosting makes it a little less sweet, it balances it out!

Elmo Cupcakes!

Everyone likes Sesame Street! And everyone likes Elmo! He's internationally known! Now, he is in cupcake form. It's just a vanilla cupcake with butter cream icing. Half an Oreo cookie is his mouth, and the marshmallows are his eyes. A dyed mini marshmallow serves as his nose. He's so cute, too cute to eat! Enjoy!

Chocolate Lava Cupcake!

A chocolate cupcake is great, but what's even better? A chocolate cupcake with chocolate in the middle! YUM! I made a chocolate cupcake and filled it with chocolate ganache. The ganache looked like lava spewing out of a volcano! The center is full of chocolate ganache! The cupcake is topped with green/teal butter cream icing with chocolate ganache drizzled on top. It's the perfect cupcake if you are craving chocolate! What do you think?

Fairy Cakes!

Fairy cakes are just what people from the UK call cupcakes! They are the same thing, but they just have a cooler name. I centered this cupcake around the UK. Honestly, I want to live there. I've never been there, but I think that it would be awesome! Anyway, these fairy cakes have Queen Victoria’s sponge cake. It was her favorite kind of cake, so they named it after her. Isn’t that nice? Supposedly, England/UK is known for its strawberries. I never knew that, did you? Because of that, I made strawberry crème filling, butter cream icing, and put a slice of a strawberry on top of every fairy cake.

Snickerdoodle Cupcakes!

A cookie and a cupcake? WHAT? Yes, it is true. This is a snickerdoodle cupcake. AMAZING, right? RIGHT. It's a yellow cupcake with cinnamon butter cream icing and crushed, homemade snickerdoodle on top! It was really good! So moist and sweet but not too sweet. The perfect combination!


What have you missed?

Since the last time I blogged, I made two more cupcakes. Unfortunately, I failed to take pictures before they were all eaten... Well, I made rainbow cupcakes and s'mores cupcakes!


The rainbow cupcakes were white cupcakes with rainbow-colored layers (thanks to food colouring!) with vanilla butter cream and jimmies on top! They were AH-DOR-ABLE!


The s'mores cupcakes I made were devil's food cupcakes with crushed graham cracker and melted chocolate at the bottom. On top was a marshmallow icing, more like a ganache, with a piece of a chocolate bar on top! YUM!

Cadbury Egg Cupcakes!

I love Cadbury eggs! The crème ones are my favorite, the caramel ones are good too, but they just aren't as good as the crème ones. Anyway, since tomorrow is Easter and I love Cadbury eggs, I decided to make cream-filled and caramel-filled cupcakes! The Cadbury egg caramel cupcakes are devil's food cupcakes with caramel filling in the center, butter cream icing, sprinkles, and a mini caramel egg on top! The Cadbury egg crème cupcakes are milk chocolate cupcakes with crème filling, butter cream icing, and a part of a crème egg on top! YUM! They are so cute!

Peanut Butter and Jelly Cupcakes!

I’m not going to lie, peanut butter and jelly, without the crust, is one of my all-time favorite foods (right behind cereal). I love baking cupcakes and peanut butter and jelly sandwiches, so I had to try to make these cupcakes. They were actually pretty good! I just made a yellow cupcake, filled it with jelly, iced it with peanut butter frosting, and put a little bit of jelly on top! They turned out great! Check it out!

Oreo Cupcakes!

Since Oreo is milk’s favorite cookie, I decided it should be cupcake’s favorite cookie too! I just made chocolate cupcakes, but I put a half of an Oreo (with the cream side) on the bottom of each cupcake before I put the batter in. I used heavy whipping cream and crushed Oreos to make the icing. I then put the other half of the Oreo on top of the cupcake to add a nice “touch”. They were delish, or as I’ve heard.

P.S.- Cadbury egg and peanut butter and jelly cupcakes are going to be made very soon! YUM!

Ice Cream Cone Cupcakes!

The sun was shining today, and it was warm which reminded me of summer, so I made ice cream cone cupcakes! I just made yellow mini and regular sized cupcakes, put one mini inside of an ice cream cone with icing, flipped a regular upside down and put it on top, flipped a mini and put it on top of the regular, iced it, and put sprinkles on it! The pink icing goes well with this blog title, right? I thought so. :)  They turned out awesome! It’s just hard to store or transport them because of their height and support system (the cone) which is not that sturdy! Now, I just have to figure out how I can put ice cream at the bottom… I’ll see if I can tackle that one next weekend!

Chocolate Chip Cookie Dough Cupcakes!

For my sports team, we have sisters and we give them sister gifts. My sister requested baked goods since she knew that I liked baking. I decided to do a “theme” for every week; every week would consist of a different cupcake. This week’s was cookie dough. I made everything from scratch. Anyway, I made a chocolate chip cupcake, baked it and when it was cooled, carved a hole in the center and put in a ball of chocolate chip cookie dough (I made it so it was safe to eat, no chance of salmonella!). I then iced the cupcakes with brown sugar frosting, put chocolate chips on top, and mini cookies on a few. YUM! When I brought them to my game, everyone went gaga over them like usual!
